I love uttappam. I’m lazy and usually use an instant mix for the batter. I see Uttappam as a healthy pancake and breakfast pizza all in one because of the unlimited toppings possibilities. I need to put more effort into making the batter from scratch.

Not too long ago I successfully made idli with made-from-scratch batter and am encouraged from that experience to attempt more homemade rather than mixes.
